Cheesy Chicken and Veggie Sandwich
On a plate of crispy potatoes we serve a delicious and nutritious sandwich filled with peppers, grilled chicken, onions and melted cheese.
Healthy Sandwich

1. Preheat the oven to 400°F (200°C).
2. Season the chicken breast with salt and pepper and then grill until cooked through.Cut into thin strips.
3. Heat 1 teaspoon of olive oil in a pan over medium heat. Add onion and pepper and sauté until soft.
4.In another pan, heat the remaining olive oil over medium heat. Add the potatoes cut into pieces and fry until crispy and golden brown.
5. Assemble the sandwich by placing the grilled chicken, fried onions, and peppers on a slice of bread. Sprinkle the surface with grated cheese and cover with the second slice of bread.
6. Place the sandwich in a preheated panini press or grill and cook until the cheese is melted and the bread is golden brown.
7. Serve the sandwich on a plate, garnished with crispy potatoes.

1 small potato, thinly sliced
